Being home for lunch every day I am getting bored of eating the same thing. Here are 9 quick and easy lunch ideas I have been making, and I hope you enjoy them!
Quick and Easy Lunch Ideas
1. Loaded Baked Potato
Super easy and so delicious! It does take an hour to cook in the oven, but once it is cooked all you need to do is add the toppings. Poke the potato with a for five to six times on each side, then cover in olive oil. Bake the potato in the oven for 1 hour at 350 °F. Once cooked, cut the potato down the middle and then butter. Lastly, add all your favorite toppings! My personal favorites are sour cream, cheese, and bacon.
2. Smoothie Bowl
This is one of my favorite lunches to make! I combine spinach, almond butter, banana and almond milk in the blender for the smoothie, but you can do any smoothie you like. I top the smoothie with fruit, granola, goji berries, coconut flakes and chia seeds. I love this because it really fills you up, is super healthy, and easy to make.
3. Avocado on Toast
I love spreading avocado on toast or rice cakes and adding some salt and chili! There are so many different things you can add to this to make a delicious lunch. My personal favorite is to add a fried or scrambled egg, some bacon and spinach.
4. Nachos
Nachos are one of the ultimate quick and easy lunch ideas! Just melt some cheese on some tortilla chips and you are good to go! I add chicken if I have any, and top it with hot sauce, salsa and guacamole.
5. Chili

This takes the longest of all the quick and easy lunch ideas, but it is worth the extra time! It takes about five minutes to make, and then cooks in the crockpot for four to eight hours, depending on the setting you use. This is my personal favorite recipe here, it is so delicious! My only recommendation is to make sure you do not use frozen chicken, it makes the chili too watery.
What is perfect about this is that you can store it in the fridge or freezer to have for days when you just need to grab something and go.
6. Almond Butter on Rice Cakes
Spread almond or peanut butter on rice cakes or toast and top with banana. I find that rice cakes fill me up more than toast does. You can also add fruits like blueberries or strawberries, and drizzle with honey for extra sweetness.
7. Pizza
Pizza is definitely one of the most delicious quick and easy lunch ideas. I prefer to use a cauliflower crust base instead of a traditional pizza base, because it is a little healthier. My favorite toppings are sausage, olives, and mushroom. Cook the pizza in the oven for 15 minutes and then you have a tasty lunch!
8. Quesadilla
Super quick and easy! All you need is a tortilla and cheese. You can add any other ingredients you have such as chicken, shrimp, corn, anything you like really. I love cheese quesadillas with a side of salsa and guacamole.
9. Peanut Butter Crunch Wrap
I got this idea from Tropical Smoothie (theirs is delicious)! All you need to do is put peanut butter, banana, and granola on a tortilla or a pita bread and toast it. You can also add honey as well. So delicious and quick!
